L'Ecole Culinaire Tuna Burgers
1 lb. tuna (doesn't have to be expensive but can't be cooked
1 scallion, roughly chopped
1 T. parsley
2 T. low sodium soy sauce
1 T. extra virgin olive oil
1 T. lemon juice (freshly squeezed)
1/2 tsp. ground pepper
2 T. canola oil
Whole grain buns
Tomato slices
Arugula
Low-fat mayonnaise
Dijon mustard
Cut tuna into inch squares and then place in food processor. Add the next six ingredients and pulse to consistency or ground beef. Form into four patties and let rest in refrigerator for at least 30 minutes. Heat oil over med-high heat and saute burgers for about three minutes per side.
