L'Ecole Culinaire Sweet Potato Fries
2 sweet potatoes (medium size)
2 T. olive oil
1 tsp. honey
1/4 tsp. orange zest
Pinch of cayenne pepper
Salt and pepper (to taste)
Peel and julienne sweet potatoes, then drizzle with olive oil, honey, orange zest, salt, pepper, and cayenne. Toss to make sure they're fully coated. Place sweet potatoes on ungreased cookie sheet and bake 30 minutes in a preheated oven at 400 degrees, turning halfway through.
